Ingredienser

1 1/4 ounces bourbon

1/2 ounce ginger-honey syrup (see Editor’s Note)

1/2 ounce lemon juice

1/4 ounce pineapple-infused rum (see Editor’s Note)

1/4 ounce egg white

Instruktioner

Add all ingredients to a shaker without ice and shake well.

Add ice to the shaker and shake briefly for 5 seconds.

Double-strain into a coupe.

Spray the top of the drink with peated Scotch, then garnish with a lemon twist or apple slices on a pick.

Pineapple-Infused Rum

In a quart container, combine combine 100 grams of cubed pineapple with 750 milliliters of rum. Strain after 24 hours.

Ginger-Honey Syrup

Combine 500 milliliters of water, 450 grams of honey, 25 grams of peeled fresh ginger and 15 grams of tamarind paste in a pot and bring to a boil, heating to around 102 degrees Fahrenheit. Strain the syrup, then refrigerate to store.
