Shawarma Chicken Bowl & Rice

Chicken:

Two pounds chicken thighs

2 tablespoons plain Greek yogurt

2 tablespoons tomato paste

1/4 black pepper 1/2 teaspoon salt, cumin , coriander. 1 teaspoon paprika, oregano

4 garlic minced

1 tablespoon lemon juice

1/2 red and yellow, bell pepper, sliced half of onion sliced.

Shawarma Sauce:

1 cup plain Greek yogurt

2 tablespoons tahini and lemon juice

1 tablespoons olive oil

2 garlic minced

1/2 teaspoon salt 1 teaspoon cumin , paprika

2-3 tablespoons water ( more for thinner sauce

Make 4 cups white rice (jasmine or long grain)

Mix all the Shawarma sauce, ingredients and refrigerate until ready to use .

Add all the seasoning to chicken. Marinate for 30 minutes or more and then add to a pan with olive oil and cook and sear the chicken approximately four minutes each side.

Two minutes before complete cooking add tablespoon of olive oil, adding the sliced peppers and onions and Grill.remove chicken to a pan.

Serve over rice . Top with shawarma sauce.
