Ingredienser

2 pounds catfish

1 teaspoon salt

1/8 teaspoon pepper

½ cup sifted bread crumbs or cornmeal

1 egg, well beaten, mixed with 1 tablespoon water

¼ cup fat

Lemon wedges

Instruktioner

Skin catfish and fillet by removing back-bone; cut into portions. Season with salt and pepper.

Dip into crumbs, into beaten egg, then into crumbs again.

Sauté in hot fat for about 12 minutes, until golden brown, turning once.

Garnish with lemon and serve hot.
