Spicy Birria Ramen Fusion

For the Birria Broth:
1 lb beef chuck roast or beef shank, cut into chunks
3 dried guajillo chilies, seeds removed
2 dried ancho chilies, seeds removed
1 dried chipotle chili (optional for extra heat)
4 cloves garlic
1 small onion, quartered
1 tablespoon cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1 bay leaf
4 cups beef broth or water
Salt and pepper to taste
For the Ramen:
2 packs of ramen noodles (discard the seasoning packet)
2 boiled eggs (optional for topping)
1/2 cup chopped cilantro
1/4 cup diced onions (for garnish)
Lime wedges (for garnish)

In a large pot, heat the beef broth (or water) over medium heat. Add the guajillo, ancho, and chipotle chilies, garlic, onion, cumin, coriander, oregano, cinnamon, and bay leaf. Bring to a simmer, cover, and cook for 30-40 minutes until the chilies are softened.
After the chilies have cooked, transfer the entire mixture to a blender and blend until smooth. Return the blended sauce to the pot.
In the same pot, add the beef chunks to the birria sauce. Season with salt and pepper. Cover and simmer for 1.5-2 hours, or until the beef is tender and easy to shred.
Once the beef is cooked, shred it using two forks and set it aside in the pot with the broth. Keep the broth simmering to intensify the flavors.
Cook the ramen noodles according to the package instructions. Once cooked, drain the noodles and divide them between serving bowls.
Ladle the hot birria broth over the cooked ramen noodles, ensuring the noodles are submerged in the flavorful broth. Top with shredded beef, boiled eggs (if using), chopped cilantro, diced onions, and a squeeze of lime juice.
