Midwestern-style Jamaican rice porridge

1 cup of rice
4 cups of water
pinch of salt
cinnamon to taste
nutmeg to taste
(optional) mixed spice to taste
condensed milk to taste
.5 teaspoon of vanilla extract
3 drops of almond extract
1.5 cups of slurry
For slurry:
1 cup of water
.5 cups of flour

Wash rice, then add to pot with 4 cups of water. Set water to boil, add pinch of salt, and cover pot with a lid. Simmer for 10 minutes.
Add desired cinnamon, nutmeg, and mixed spice. Stir, then continue to simmer for another 10 minutes.
Mix .5 cups of flour with 1 cup of water to make the slurry. Stir slurry into pot, until porridge is at the desired thickness. Turn off the heat, and add vanilla and almond extract. Add condensed milk to taste. Serve hot. Add whatever toppings you’d like.
Optional: For the slurry, instead of 1 cup of water, use any kind of milk. You can also add milk to taste after cooking, or when reheating.
