Green Bean Supreme

1 large bag (32 oz.)or 2 small bags (16 oz) French style green beans OR Haricots Vert (whole; the baby ones!)
1 large bag (16 oz?) Tillamook or equivalent quality shredded mild cheddar cheese (or a small block, shredded)
1 large container of sour cream
1/2 a medium onion, diced
4 Tbsp butter
About a Tbsp of flour
salt & pepper to taste

Put butter into large (10 inch) skillet with butter; melt over low heat.
Add diced onion to melted butter, and cook over medium heat until almost translucent.
Cook beans in a medium pot of boiling water (according to pkg directions, but until just barely done, still crisp); Drain and set aside.
Sprinkle butter and onions in skillet with flour and season with salt and pepper (mostly pepper!) Stir until flour is cooked, about 5-7 mins or so. (Flour should bubble and be saturated; it will brown slightly and then you know it is cooked. Otherwise it can have an unsavory raw taste in the finished dish.
Once flour is done, reduce heat to low; Add in sour cream and stir to incorporate until sour cream is softened and ingredients have come together, a few mins.
Add strained beans and fold together until beans are well distributed with other ingredients. Turn off heat and dump mixture into a large, covered baking dish. (The white Corelle large covered casserole with the Pyrex lid works great!)
Add shredded cheese on top. Cover.
Now you can either refrigerate until just before dinner, or bake immediately. I love making this a day or two ahead.
About an hour before you plan to serve, pull it out of the fridge and bake it at 350 deg. F for about 40 mins., or until cheese is completely melted and dish is heated through.
Remove from oven; leave it covered and place on trivet or thick hot pad (not directly on counter, so your dish doesn’t shatter!) to cool slightly before serving. The hot covered dish will keep it melty for a reasonable amount of time, so not a huge hurry!
Remove the lid when it’s time to plate.

This is a really simple dish - one of my favorites from my own childhood! I have always cooked this for thanksgiving, and often for Christmas and/or New Year’s Eve as well! I hope you enjoy it with your family someday, too ~ like all of the holiday dishes in our family treasury. There is something about tradition!
All of that said, I have always wanted to mess with this recipe a bit - it is super yummy as is, but I can imagine bacon bits stirred into the mixture just before it goes into the dish! I might have to try that myself one of these days. ;) Have fun with it! XOXO
