1 lb thinly sliced steak (you can get at trader joes stir fry beef)
Marinade:
2 tbsp soy sauce
1 tbsp sesame oil
2 tbsp cane sugar
2 garlic cloves minced
¼ tsp black pepper
Noodles:
8 oz sweet potato noodles ( you can get these at Asian market or in Asian section of stores ) Dangmyeon
4 tbsp neutral oil like avocado oil
Salt & pepper
1 onion, thinly sliced
3 carrots, peeled and cut into thin matchsticks
1 bell pepper, thinly sliced (I didn’t have on hand)
1 package cremini mushrooms, stems removed, thinly sliced
3 green onions, chopped
3 cups baby spinach
Sesame seeds
Sauce:
¼ cup soy sauce
2 tsp sugar or honey
3 garlic, finely minced
1 tbsp sesame oil
½ tsp salt
¼ tsp black pepper
Postup
Combine marinade & Marinate beef for ~15 minutes while prepping other ingredients.
Cook noodles according to package instructions. Drain and rinse with water . Let noodles drain until ready to use.
Heat 2 tbsp avocado oil over high heat. Cook onion and mushrooms together til softened. ~5 min over medium heat. Season salt pepper. Set to side in large bowl
Add carrots and red bell pepper to pan. Add oil and cook for couple minutes til softened. Season with salt, pepper and 1 tbsp sesame oil. Add spinach til wilted then add to bowl with cooked onions & mushrooms.
Cook beef in pan until cooked through. Takes ~5 min. Set to side and add to veggies.
Pour sauce ingredients into pan over medium heat. Cook about 1 minute then add in noodles. Toss well. Turn heat to low & Add in all veggies and meat. Toss well. Season with sesame seeds, sesame oil s & pepper as needed. Top with green onions. Enjoy!
