Turkish White Beans

250g dried white beans (I use Argentina white beans, but any will do)

3 tablespoons extra virgin olive oil, plus more to serve

2 tablespoons lemon juice, or to taste

1 ½ garlic cloves, crushed salt and black pepper

For the toppings finely sliced red onion finely chopped coriander leaves pul biber (Aleppo pepper), or sweet paprika

Rinse the beans, then soak them in a large bowl with plenty of cold water overnight.

The next day, drain the beans and place them in a large saucepan. Cover with enough just-boiled water to cover the beans by a couple of inches. Bring to the boil for 5 minutes, skimming off any scum that rises to the surface, then cover and simmer. Depending on the freshness of the beans, it will take anywhere between 25-45 minutes for them to soften.

When the beans are tender, drain and immediately dress them while they are still hot with the olive oil, lemon juice, garlic, 1½ teaspoons salt and ½ teaspoon black pepper. Mix well and leave for at least 15 minutes for the flavours to come together. Taste and adjust the seasoning to your preference; you may want a touch more salt or lemon juice. To serve, drizzle over a couple more tablespoons of olive oil and top with very finely sliced red onion (I use a mandolin to slice this), coriander and a smattering of pul biber or paprika.

Deceptively simple but utterly delicious. You wouldn’t think just white beans, lemon juice, olive oil, salt, garlic, and onions with cilantro and paprika (my sub for Aleppo pepper on this day) on top would be that excellent but it really is. [pita 3 - outcome 9]
