Homemade Chipotle Chicken Bowls

3 lbs chicken thighs, boneless and skinless
1 can chipotle peppers in adobo sauce (to reduce spiciness, do not add the whole peppers)
1 tbs olive oil
1 tbs honey
1 tbs onion powder
1 tbs garlic powder
1 tbs ground cumin
1 tbs smoked paprika
1 tbs dried oregano
1 tsp salt
1 tsp pepper
Postup
add chicken to a bowl with all ingredients; mix well
marinate for at least 30 min
grill at 400F until internal temp is 165F
rest for 10 min before cutting
Cilantro Lime Rice 🍚
Ingredients:
2 1/2 cups chicken bone broth
1 1/2 cups uncooked white rice, rinsed
dried bay leaf
2 limes
1/2 cup of chopped cilantro
salt to taste
1 tsp olive oil
Instructions:
add rice, broth, and bay leaf to rice cooker; cook until fluffy
transfer to a bowl with the rest of the ingredients; gently toss together
taste the rice and adjust if needed
Seasoned Black Beans 🫘
Ingredients:
1 15-oz. can unsalted black beans, rinsed
2 cups water
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
dried bay leaf
Instructions:
add ingredients into small saucepan and mix well; cover and simmer on low for 10 min until tender
Pico de Gallo 🍅
Ingredients:
3 roma tomatoes, diced
half of an onion, diced
1 jalapeño, diced
salt, cilantro, and lime juice to taste
Corn Salsa 🌽
Ingredients:
1 15-oz. can unsalted corn, rinsed
half of an onion, diced
1 jalapeño, diced
salt, cilantro, and lime juice to taste
Fresh Guacamole 🥑
Ingredients:
3 ripe avocados
half of an onion, diced
1 roma tomato, diced
1 jalapeño, diced
salt, cilantro, and lime juice to taste
