Chocolate Terrine

Preheat oven to 300
Melt 16 oz chocolate in double boiler (metal bowl over shallow skillet filled with water)
Add 4 shots espresso to melted chocolate
In kitchen aid, mix 4 whole eggs and 2 egg yolks plus 1/2 c sugar for 10 mins
Add melted chocolate; stir egg and sugar mixture with melted chocolate and espresso
Whip 1 c cream in kitchen aid alone, then add to chocolate mixture; make sure whipped cream is well incorporated in the chocolate mixture
Put into terrine tins lined with foil
Put into shallow pan with water (Bain Marie)
Cover tins with foil and bake for 30 mins; keep checking; more time if needed
When cool, cover with plastic wrap
