This week I’m coming back to you with another meal prep salad and this one is an absolute banger.

Pan-seared chicken breast gets tossed with a bunch of veggies and a killer High Protein Buffalo Ranch Dressing.

Salad

2 lbs chicken breast, seared

1 tbsp neutral oil

2 15 oz cans of chickpeas, drained/rinsed

1 large red bell pepper, diced

1 large yellow bell pepper, diced

5 large stalks celery, sliced

1/2 red onion, minced & soaked in water to mellow out

1 bunch dill, minced

Dressing

1 ½ cups 0% greek yogurt

3/4 cup Frank’s buffalo wing hot sauce

1 1oz packet ranch seasoning OR the following spices:

1 ½ tsp garlic powder

1 ½ tsp onion powder

3 tbsp dried chives

1 ½ tsp diamond crystal kosher salt

Water as needed to thin
