Snowboard Weekend Pasta

1lb Rigatoni Pasta (can use any large shape)
1lb Italian Sausage (chicken or pork - check if pre-cooked)
2 packages sliced cremini mushrooms
1 large head broccoli, break down into spears
One large onion, chopped
Three cloves garlic, pressed or chopped
4 oz sour cream
4 oz shredded cheese (cheddar, mozzarella , Italian blend etc)
1/2 cup Grated Parmesan cheese
Olive oil
Salt & pepper

Turn on oven and set to 375 degrees.
Fill a large pot 1/2 full of water. Add 1 teaspoon salt and bring to a boil. Add pasta and cook for time shown on box. Once done, drain pasta and toss with 1 tbsp olive oil back in pot.
Meanwhile check if sausages are pre cooked (look on package, chicken is always pre-cooked, pork usually not). Slice sausage into rounds about 3/4” thick and fry in a large frying pan on medium-high heat.
If sausages are pre-cooked, you just want to brown both sides in about 1 tablespoon oil. Otherwise cook raw sausage until slices are no longer pink on inside when cut into with spatula.
Once sausage is browned, remove from pan. Fry onions in grease in pan (add more oil if too dry). Once onions are translucent and soft, add the mushrooms and garlic and fry until mushrooms are soft. Add 1 teaspoon salt and some pepper.
Add sausage, onions, mushrooms and broccoli to pot with pasta. Stir well to combine.
Add sour cream and shredded cheese to pot and stir well.
Pour pasta mixture into a large glass rectangular casserole dish. Top with 1/2 cup grated Parmesan.
Bake in oven for 20-30 minutes. Once the top is browned, it is done.
