Enoki Seaweed ‘scallop

Ingredients (1-2 serving):
3 packs (~300g) enoki mushrooms
3 seaweed sheets
3 rice paper
Sauce:
1 tbsp gochujang
1 tbsp maple syrup
1 ½ tbsp vegan mayo
1 tbsp water
Seaweed flakes (check out day 8 recipe)
Sesame seed
Slightly chop off the bottom part of the enoki mushroom, and wash thoroughly. Wrap the enoki mushroom from the side first and then roll it up. Dap both sides of the rice paper in a plate of water. Repeat the wrapping step for the rice paper sheet (make sure to wrap as tightly as possible). Slice up the roll (1-1.5cm). In a pan, heat up the oil on medium heat, and pan fry both side of the ‘scallop’ until golden brown. For the sauce, add the gochujang, maple syrup, mayo, water, mix well, and top it off with seaweed flakes and sesame seeds. Enjoy!
