Greek-ish Three Bean Salad

For the salad:
3 (15-oz) cans beans of choice, drained and rinsed (I used garbanzo beans, black eyed peas, and cannellini beans)
1 bell pepper, diced
2 mini seedless cucumbers (or 1 regular cucumber), diced
1/2 red onion, diced
1 cup pepperoncini, chopped
4 ounces feta cheese, crumbled
1 small bunch parsley, finely chopped
For the dressing:
1/2 cup extra-virgin olive oil
3 Tbsp red wine vinegar
2 Tbsp fresh lemon juice, from about 1/2 large lemon
1 Tbsp dried oregano
1 Tbsp ground sumac (or substitute with fresh lemon zest)
1 tsp honey or agave nectar (optional)
Kosher salt and black pepper
Postup
Combine all salad ingredients in a large bowl.
Shake together dressing ingredients in a jar.
Toss together and EAT. Scoop up with pita chips to take it to the next level.
