Orange Chicken

2 lbs chicken breasts and thighs, cubed
3 eggs, beaten
½ cup flour
½ cup cornstarch
1 cup orange juice
½ cup sugar
½ tsp garlic powder or 2 cloves fresh garlic, minced
¼ tsp red pepper flakes
½ tsp fresh ginger, minced
2 Tbsp soy sauce
2 Tbsp rice vinegar
2 Tbsp water
1 Tbsp cornstarch (for slurry)
Vegetable oil, for frying
Steamed white rice, for serving

Make the Sauce:
In a saucepan over medium heat, add orange juice, sugar, red pepper flakes, ginger, garlic, rice vinegar, and soy sauce.
Stir and cook for about 3 minutes.
In a small bowl, mix 2 Tbsp water with 1 Tbsp cornstarch until smooth.
Slowly whisk the slurry into the saucepan. Reduce heat to low and cook for about 5 minutes, until thickened. Set aside.
Prepare the Chicken:
Crack 3 eggs into a bowl and whisk until combined.
In another bowl, mix flour and cornstarch together.
Dip chicken cubes into the egg mixture, then dredge in the flour-cornstarch mixture to coat lightly.
Fry the Chicken:
Heat vegetable oil in a deep skillet or wok over medium-high heat.
Once hot, add coated chicken pieces in batches. Fry for 5–7 minutes, until golden brown and cooked through.
Remove and drain on a paper towel-lined plate.
Combine & Serve:
Toss fried chicken pieces in the orange sauce until well coated.
Serve hot over steamed white rice.
