100 gr of Guanciale (or good quality pancetta
400 gr tomato sauce
50ml of white wine
1/2 red chili, diced

Directions Let's start cutting the guanciale in 0.5 cm cubes, place a pan over a medium-low heat and when hot ada your guanciale in, let cook until the fat melts down and the cubes are nice and golden, pour in the white wine and let simmer until reduced then add the tomato sauce and diced red chili, let cook over a low heat for at least 15 minutes or until thickened. Season with salt and if your tomato sauce tastes too acidic you can add a pinch of sugar.
