Salmon:⁣

2 cups cooked sushi rice⁣

1 lb salmon, cut into small pieces ⁣

3/4 cup teriyaki sauce of choice⁣

Sauce:⁣

1 cup cottage cheese⁣

2 tb sesame oil⁣

1/4 cup sriracha ⁣

2 tsp garlic powder⁣

Garnishes:⁣

1 avocado, chopped ⁣

3 green onion, sliced⁣

3 tb furikake⁣

1/2 cup crispy onions (optional)⁣

Instrucțiuni

Cook the sushi rice and set aside. Make the spicy sauce by adding all of the ingredients to a blender and blending until smooth, then set aside. Next, spray an 8x8 baking dish with spray of choice (I use avocado oil). Add the cooked rice and use a spatula to press it down into an even layer. Toss the salmon pieces in teriyaki sauce and add it on top of the rice. Turn broiler on high and place the tray on the top rack and broil for 7 minutes or so, until the edges of the salmon get crunchy. Top with avocado, green onions, crispy onions and spicy sauce. Cut into pieces and serve. Enjoy!
