Crispy Cheeseburger Egg Rolls

1 lb ground beef
1 cup shredded cheddar cheese
½ cup diced onion
¼ cup diced pickles
1 tbsp ketchup
1 tbsp yellow mustard
12 egg roll wrappers
Salt and black pepper (to taste)
Oil for frying

Cook the beef
Heat a skillet over medium heat.
Cook ground beef with diced onion until browned.
Drain excess grease.
Season
Stir in ketchup, mustard, diced pickles, salt, and pepper.
Cook for another 1–2 minutes, then remove from heat.
Add cheese
Mix shredded cheddar cheese into the warm beef mixture.
Fill the wrappers
Lay an egg roll wrapper in a diamond shape.
Place 2–3 tablespoons of filling in the center.
Fold the bottom corner over the filling, fold in the sides, then roll tightly.
Seal the edge with a little water.
Fry
Heat oil to about 350°F (175°C).
Fry egg rolls for 3–4 minutes until golden brown and crispy.
Drain on paper towels.
