Chicken Gnocchi Soup

2tbs olive oil
Two Chicken Breasts split (season to taste with garlic herb, thyme, Italian, salt, pepper, and Kfreds)
4 tbs butter
3 celery stalks diced
3 carrots diced
1 shallot minced
3 garlic cloves minced
1/4 cup AP flour
3 cups chicken broth
2 cups milk
2 cups heavy whipping cream 2-3 cups baby Spinach Gnocchi
Cut chicken breast in half and season to taste with the above spices. Add olive oil to pan and brown chicken 3 minutes on each side then remove from pan, shred and set aside. Add butter and sauté veggies for 8 minutes. Add garlic and cook for another minute. Add flour and cook for 2 minutes. Next add in all liquids and 1 tsp of the spices you used to season chicken breast with. Add more seasoning if needed for your taste. Add shredded chicken back to pot. Cover and let simmer for 15 minutes. Add in gnocchi and cook for a couple of minutes until they float to the top. Now you can add in your spinach cook for another couple of minutes and you’re done.
