Baked Lemon Pepper Chicken Thighs.

4 lbs bone in, skin on chicken thighs (this was about 8 pcs for me)
3 tbsp avocado oil (to drizzle)
1 ½ tbsp garlic powder
1 tbsp onion powder
1/2 tbsp adobo
1 tbsp lemon pepper
1/2 tbsp Cajun seasoning
1 tsp oregano
6 garlic cloves, minced
2 small lemons: zest of (2), (1) sliced, (1) juiced
Small white onion, sliced
1 cup chicken broth
2 tbs butter, sliced
salt and fresh cracked pepper, to taste.
RECIPE:
Season the chicken GENEROUSLY. Top with sliced onion, sliced lemon, and butter. For about a cup of low sodium chicken broth, I use better than bouillon. Bake uncovered at 400F for ~ 50 minutes.
Note: at about 25 minute mark, I start basting the chicken with the broths it makes. This gives it great color and ensure it stays moist. I baste about 1-2 times until the chicken is done.
Serve over rice or potatoes and don’t forget to pour over more liquid.
