Shrimp Chowder GUM

8 strips of bacon, diced
1 Kg (2 Lb) shrimp peeled and deveined
Fat for frying as needed
1 medium onion, diced
3 stalks celery, diced
1bell pepper, diced
3 cloves garlic, minced
60 mL (¼ cup) all-purpose flour
1L (4 cups) chicken broth
Cajun spice blend - see below. I have used all of this but I love this flavor, recipe calls for about 1/3 of it
500g (1Lb) potatoes, diced
750 mL (3 cups) cream / milk
Salt and pepper to taste
1L (4 cups) fresh or frozen corn
Cajun-ish Spice Blend:
30 mL (2 Tbsp) paprika
30 mL (2 Tbsp) garlic powder
30 mL (2 Tbsp) dried oregano
15 mL (1 Tbsp) coarse salt
15 mL (1 Tbsp) onion powder –
optional 10 mL (2 tsp) pepper
Optional - 10 mL (2 tsp) cayenne
Instrucțiuni
Method: Cook bacon in a large pot until crisp, transfer to a plate. Add shrimp to pot and sauté until pink, transfer to a plate. Add onion, celery, bell peppers, and garlic to pot and cook until onions begin to soften. Stir in flour and cook 1-2 minutes. Stir in broth, seasoning and potatoes; bring to a simmer, cover and cook until potatoes are softened. Add cream, corn, bacon, and shrimp back to the pot; season with salt and pepper to taste. Cover and simmer for 5-10 minutes before serving.
