Cornish Pasties

Flaky dough:
2 C all purpose flour
2 pinch salt
4oz cold butter (1stick)
4-6 tbsp water
Filling:
1/2 swede, grated
1/2 yellow onion, chopped
4 cloves garlic, minced
4 green onions, chopped
1 carrot, grated
2 potatoes, grated
2 tbsp fresh parsley, chopped
1 tube sausage
Salt and pepper
1 egg, scrambled
Butter for filling

Preheat to 375
Combine flour and salt in a medium bowl. Cut butter into dry ingredients with a pastry cutter and mix until it resembles a coarse powder like cornmeal. Add water and knead by hand until dough comes together.
Mix filling in a large bowl and season with salt and pepper.
Take 1/4 of the dough and roll it into a thin circle. Add a line of sausage down the middle, then top with a generous amount of filling. Add a pad of butter on top and fold the dough over to create a half-circle. Crimp the edges and transfer to a lined baking sheet.
Slit the tops of hand pies and brush with egg wash. Bake for 20-30 minutes until golden brown.
