Tiramisu Oats

Ingredients:
- 1 cup Greek yogurt, divided (I used Chobani, 10% protein)
- 1½ tablespoons chia seeds
- 2 teaspoons maple syrup
- 3–4 tablespoons freshly brewed coffee
- 2 tablespoons rolled oats
- 2 teaspoons cacao powder (for dusting)
Instructions:
- In a container, mix together ¾ cup of the Greek yogurt with the chia seeds, maple syrup, coffee, and oats.
- Stir well until fully combined.
- Cover and place in the fridge overnight (or at least 2 hours).
- Before serving, top with the remaining ¼ cup Greek yogurt and dust with cacao powder.
***This pudding provides approximately 28g of protein with ~25g from the Greek yogurt and ~3g from chia seeds and oats, and around 9g of fibre, from the chia seeds, oats, and cacao powder.
