Ruth's Spagetti Sauce and Lasagna

• 3/4 large cans whole tomatoes –

• 1 large can tomato sauce – I like Hunts.

• 1 large can tomato paste – Hunts again – large size not the small one.

• 3 cloves of garlic – peeled with ends cut off – but otherwise whole (should be removed when you are done)

• Some red pepper flakes – a teaspoon at the most – it will not taste spicey but it does add some flavor – what mom used to do was add a real red pepper – again just cut the ends off, did not open it up – and take it out after it was ready.

• Salt and Pepper – I don’t measure these but remember you can always add more, but you cannot add less. 

• Oregano – crushed – here I add a lot – basically almost cover the top of the sauce (this is the last thing I add) - I am not sure you can add too much oregano.

Blend the tomatoes in blender on high until pink (a lot in other words.) – I will use either Hunts or some brand from Italy – but don’t use el cheapo tomatoes.

Time to cook – heat it up and stir to get the pot going, but once it is hot cook it on the lowest you can and just stir every half hour or so. A good batch takes at least four hours to cook down - six is better– the longer it cooks, the better it tastes.

I taste it as I stir – sometimes adding salt or pepper. Rarely, the tomatoes end up with a bitter taste and I add small amounts of sugar until it goes away, this is usually done after they have cooked a few hours.

Time to eat.

Lasagna:

Cook up a batch of Ruth McGuigan’s Spaghetti sauce.

9 X 13 pan size

One box of lasagna noodles

Three sleeves of mozzarella and provolone cheese

Pepperoni – optional

Cook lasagna per package directions

Pam or butter pan

Start with a light layer of sauce.

Add layer of noodles – 3 lengthwise

Add a layer of both cheeses

Cover with a layer of sauce

Repeat

You can alternate cheese or use less as desired. I usually have a layer of cheese on top covered by a good layer of sauce. You will be surprised how much sauce this takes to make this recipe, so if you want extra sauce cook a large batch.
