Mexican Chicken Pizza

RECIPE - Makes 7 pizzas
INGREDIENTS:
14 zero carb street taco tortillas
7 Tbsp Taco Bell sauce (mild or hot)
2 large boneless skinless chicken breasts
2 cups shredded cheddar cheese
2 Tbsp Kristy’s Homemade Taco Seasoning
2 green onions, sliced
1 Roma tomato, chopped
1/3 cup Kristy’s Homemade Salsa
1/3 cup fat free refried beans
DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. Cook the chicken breasts on both sides in a skillet over medium heat until they reach an internal temperature of 165 degrees F.
3. Shred the chicken and add it back into the skillet. *Turn heat down to medium-low.
4. Stir in the salsa, refried beans and about 1/2 of the shredded cheese. Once the cheese is melted, remove from heat and set aside.
5. Place 7 tortillas on a parchment lined baking sheet and then spoon some of the chicken mixture onto each one.
6. Place another tortilla on top of each one, pressing down slightly.
7. Spread 1 Tbsp of Taco Bell sauce on top of each tortilla and then sprinkle on the remaining cheese.
8. Bake for 10-15 minutes or until the cheese is melted and bubbly.
9. Remove from the oven and add on the diced tomatoes and green onions.
