Red Curry (or Green) Dumpling Soup

1 tbsp Vegetable oil
1/2 Onion (diced)
1/2 tbsp Minced ginger (can also use powder just use only 1/2 tsp if you do)
1 1/2 tbsp Minced garlic
1 - 3 tbsp red or green curry paste (see notes)
4 cups Chicken stock
400ml Coconut milk
1 1/2 tbsp Sugar
1 tbsp Fish sauce
Lime juice (from 1 lime) or just bottled
24 Wontons, Dumplings or Gyozas (Bibigo or Mandu brand is very good. Whatever flavor you prefer)
***You can also add baby bok choy or regular bok choy if you want. It’s yummy to me
I used 4 baby bok choy. Cleaned and pulled off stem
Instrucțiuni
Sautéed onion in oil until soft.
Add ginger, garlic and curry.
Sauté until fragrant maybe 1min or so.
Add chicken stock and coconut milk.
Bring to a simmer.
Add sugar, fish sauce and lime juice.
Add wontons, dumplings or gyozas.
Simmer 5-10 minutes.
Cut heat. And serve.
If you want you can add baby bok choy after you cut heat.

Note
When choosing a curry paste the better the quality the hotter it will be.
I used MaePloy Green curry paste and it was sooooo good but pretty spicy but I also used 4 T. I would recommend to start with 1 T and go up from there
The first couple times I used Thai kitchen curry from Walmart and I had to use 4T because it wasn’t a good quality.
***I also eat with white rice sometimes.
