One-pot Honey Garlic Chicken and Noodles

2 tbsp olive oil
1 lb (450 g) chicken breast, cut into bite-sized pieces
1/4 cup corn starch to coat the chicken in
4 cloves garlic, minced
1 small onion, finely chopped
1/4 cup honey
1/4 cup soy sauce (low sodium if preferred)
2 tbsp hoisin sauce (I don’t have so using a substitute of soy sauce, honey or brown sugar, and peanut butter mixed together)
1 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp red pepper flakes (optional, for spice) I am using 1/2 Tablespoon of sriracha
8 oz (225 g) noodles (lo mein or spaghetti)
2 cups chicken broth
1 tablespoons cornstarch mixed with 1 Tablespoon water
2 tbsp green onions, chopped (for garnish)
Sesame seeds (optional, for garnish)

Sear the chicken: Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken pieces and cook until golden brown on all sides, about 5-6 minutes. Remove the chicken and set aside.
Sauté aromatics: In the same skillet, add the garlic and onion. Sauté for 2-3 minutes, until fragrant and softened.
Create the sauce: Stir in the honey, soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Let the mixture simmer for 2-3 minutes.
Cook the noodles: Add the uncooked noodles and chicken broth to the skillet. Stir to combine and ensure the noodles are submerged in the liquid. Cover and cook on medium heat for 8-10 minutes, stirring occasionally, until the noodles are tender.
Thicken the sauce: Add the cooked chicken back into the skillet. Stir in the cornstarch slurry and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
Garnish and serve: Remove from heat and sprinkle with chopped green onions and sesame seeds, if desired. Serve hot and enjoy!
