1 cup warm milk around 110°F (it should be warm, but you should be able to comfortably put your finger in it)
1 packet active dry yeast (=7 grams)
3 tbsp brown sugar
2 tbsp melted butter
2 ½ cups all purpose flour
½ tsp salt
3 tbsp baking soda
1 ½ cups warm water
coarse sea salt or topping of choice
3 tbsp melted butter for brushing on the pretzels after they are baked

in a small bowl, Stir together the yeast and the warm milk (around 110°F). Let sit for around 10 minutes.
In a stand mixer fixed with a dough hook (if you don’t have a stand mixer, use a large bowl) add the 2 tbsp of melted butter, brown sugar, and the yeast/milk mixture together and stir.
Add the flour and salt and knead with a stand mixer or by hand for around 10 minutes. Knead until the dough is smooth and elastic. It should be easy to handle.
Cover and let the dough rise on your counter for around 1 hour or until doubled in size.
Preheat the oven to 450°F and line two baking sheets with parchment paper.
Punch down the dough and divide it to shape your pretzels. You can either cut them into bite sized pieces for pretzel bites or cut off a chunk and roll it into very thin logs to shape for pretzels.
In a medium bowl, combine the baking soda and warm water together. Dip each pretzel into the water mixture then place the pretzels on a lined baking sheet. (This helps the pretzels get that golden brown exterior)
Salt the pretzels with a coarse salt.
Bake for 7 minutes or until browned.
Melt 3 tbsp of butter and brush each pretzel after they are done baking and still hot.
