Sour Cherry and Sweet Cheese Yeast Buns

For the dough
250 ml warm milk
40 g sugar
1 pinch of salt
10 g vanilla sugar
7 g dry yeast
1 egg (room temperature)
~400–450 g all-purpose flour
60 g butter, melted and warm
For the cheese filling
400 g farmer’s cheese / cottage cheese (5–9% fat)
1 egg yolk
10 g vanilla sugar or vanilla extract
30 g sugar
2 heaping tablespoons sour cream
1 heaping tablespoon vanilla pudding powder or cornstarch
For the sour cherry topping
300 g sour cherries (frozen, pitted)
Sugar to taste (about 2 tablespoons)
1 heaping tablespoon cornstarch
50 ml water
Instrucțiuni
1. Dough
Combine warm milk, sugar, vanilla sugar, salt, and yeast. Let stand 5–10 minutes, until foamy.
Add the egg and mix well. Gradually add the flour to form a sticky dough. Add the melted butter and knead for about 5 minutes, until smooth.
Transfer to a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
2. Cheese filling
Mix the farmer’s cheese, egg yolk, vanilla sugar (or vanilla extract), sugar, and sour cream until smooth. Add the cornstarch or pudding powder last. Set aside.
3. Sour cherry topping
Combine the cherries and sugar in a saucepan and heat until the sugar dissolves.
Mix the cornstarch with the water, then add gradually to the cherries. Cook briefly over low heat until thickened. Cool completely.
4. Shape and assemble
Divide the dough into equal portions and shape into balls. Place on a parchment-lined baking sheet. Cover and let rise 15–20 minutes, until doubled.
Press an indentation into each bun using the bottom of a lightly oiled glass. Fill with the cheese mixture.
Brush the edges with egg yolk mixed with milk. Spoon the cherry topping into the center and sprinkle with streusel.
5. Bake
Bake at 170°C (340°F) for 20–25 minutes, until golden.
