Spicy Stir-Fried Pork with Green Beans and Tomatoes

2 tablespoons neutral oil, such as peanut, sunflower, or grapeseed, plus more if needed
1 pound ground pork
1 teaspoon kosher salt, divided
8 ounces green beans, cut into ½-inch lengths
1 pint cherry or grape tomatoes, halved
1 to 2 jalapeño or serrano chiles, seeded if you like, thinly sliced
1 tablespoon grated fresh ginger
5 garlic cloves, minced
1 teaspoon cumin seeds
¼ cup chopped fresh cilantro leaves and tender stems, plus more for serving
3 tablespoons rice vinegar, plus more for serving
4 teaspoons soy sauce, plus more for serving
½ teaspoon sugar

1. Heat a large skillet over medium-high heat for 1 minute, then add the oil and heat for another 30 seconds-it should be hot but not smoking. Stir in the pork and ¾ teaspoon salt, and cook, breaking up the meat with a spoon, until browned and crispy, 6 to 9 minutes. Use a slotted spoon to transfer the pork to a plate.
2. Return the pan to the heat and add more oil if it looks dry. Stir in the green beans and tomatoes and cook for 30 seconds. Stir in the chiles, ginger, garlic, cumin seeds, and remaining ¼ teaspoon salt. Cook, stirring frequently, until fragrant, about 1 more minute.
3. Return the pork to the skillet, along with the cilantro, vinegar, soy sauce, and sugar. Stir briefly to combine, then scrape onto a serving platter.
4. To serve, sprinkle with more vinegar and soy sauce to taste, then top with cilantro.
