American Pancakes

400 g all-purpose flour (about 3 ¼ cups)
500 ml milk (2 cups)
4 eggs, separated
3 teaspoons baking powder
½ teaspoon baking soda
A pinch of salt
5 tablespoons sugar
1 packet vanilla sugar or 1–2 teaspoons vanilla extract
6 tablespoons oil or 6 tablespoons (85 g) melted unsalted butter
A little butter or oil for cooking
Instrucțiuni
Prepare the batter
In a large bowl, whisk together the egg yolks, milk, sugar, vanilla, and oil or melted butter.
In a separate bowl, mix the flour, baking powder, baking soda, and salt.
Add the dry ingredients into the wet ingredients and mix gently until combined.
The batter will be thick, and that’s normal.
Whip the egg whites
In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
Gently fold the whipped egg whites into the batter using a spatula.
Don’t overmix — this keeps the pancakes fluffy.
Cook the pancakes
Heat a non-stick pan over medium heat and lightly grease it.
Pour in small rounds of batter (about 2–3 tablespoons each).
Cook until bubbles form on the surface and the edges look set.
Flip and cook the other side until golden.
Note
Serve warm with:
Maple syrup
Fresh fruit
Butter
Chocolate or vanilla sauce
Whipped cream
Or make bacon, maple syrup and egg pancakes.
