German Potato Salad MJM

• One large (5 lb) bag of Yukon potatoes
• 8 slices bacon
• 2 tablespoons all-purpose flour
• 1/4 cup white sugar
• 2/3 cup water
• 1/2 cup white wine vinegar
• 1 cup chopped sweet yellow onion
• salt and pepper to taste
Instrucțiuni
1. Peel and Slice – cut into pieces if slices are large
2. Boil - 13 minutes about
3. Chill
4. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.
5. Add chopped onion to bacon grease and cook until tender.
6. Remove onions leaving bacon grease in skillet
7. Add the flour to grease to brown and slowly add liquids to mix like a rue - , sugar, water and vinegar to skillet and cook over medium heat until dressing is thick.
8. Add bacon, potatoes and onions to skillet and stir until coated. Cook until heated and season with salt and pepper.
9. Serve warm.
