Funeral Potatoes

1 30-oz bag frozen shredded hash brown potatoes

1 8-oz container sour cream

1/4 Cup all-purpose flour

1 Cup whole milk or 2% milk

1 3/4 Cup low sodium chicken broth

8 Ounce shredded cheddar jack cheese

1/2 Cup onion flakes

1 1/2 Teaspoon kosher salt

1 Teaspoon freshly ground black pepper

1 Cup corn flakes

1/4 Cup finely grated Parmesan cheese

2 Tablespoon butter, melted

Step 1

Preheat the Traeger with lid closed to 400°F; this will take about 15 minutes. Take the potatoes out of the freezer to defrost while the grill heats and you prepare the other ingredients.

Step 2

In a large bowl, whisk the sour cream and flour until well combined. Slowly whisk in the milk and then the chicken broth. Add the cheese, onion flakes, salt, and pepper. Add the defrosted potatoes and mix well. Scrape the mixture into a 9x13-inch baking dish.

Step 3

In a small bowl, combine the cornflakes, Parmesan, and butter. Scatter the topping evenly over the potatoes.

Step 4

Place the baking dish directly on the grill grates. Cook, rotating the dish halfway through cooking for the most even browning, until the casserole is golden brown and bubbling around the edges and the center reaches at least 205°F on an instant-read thermometer, 1 to 1¼ hours. (The time can vary depending on your baking dish, the weather, and your grill.)

Step 5

Let cool for at least 10 minutes before serving. The casserole will continue to thicken as it cools. Enjoy!
