Enchiladas Suizas Verde

Tortillas flour or corn
1 rotisserie chicken debone and shredded
2 cup melty cheese divided (Monterey, Mozzarella, Fiesta, Chihuahua, Oaxaca, etc…..)
Salsa Verde:
2-3 poblano peppers de-seeded
2 jalapeños de-seeded
2 garlic cloves
8 tomatillos
1/4 onion
1 c chicken broth
1 bunch cilantro
1 block cream cheese
1/2 c table crema or sour cream
Instrucțiuni
Debone chicken and shred. Add 1 cup cheese. Set aside.
Boil onion, poblanos, jalapeños for 3-5 min.
Add tomatillos to boiling water and boil another 2-3 minutes. (Remember not to over boil tomatillos because they will get bitter.)
Drain vegetables and de-seed all peppers.
Add all vegetables and remaining salsa verde ingredients to a blender and blend well.
Pour about 1/2-3/4 c salsa into chicken mixture and mix together.
Pour about little salsa into bottom of baking dish and spread out.
Lay a tortilla into the sauce that is in the baking dish and put chicken mixture on tortilla then roll and put in rows in the dish.
Continue until all mixture is gone.
Pour remaining sauce over enchiladas and top with remaining cheese.
Bake on 350 degrees for @20 min and then broil for @5 min.
