Frozen Lemon Bars

Base:

1½ cups mixed nuts (almonds, walnuts, cashews, etc.) (200g)

1½ cups pitted dates (200g)

Filling:

2 cups raw cashews, soaked at least 4h (250g)

½ cup canned coconut milk (use the creamy part) (100g)

¼ cup honey or sweetener of choice (50g)

Juice of 2 lemons

Lemon zest (for topping)

Time: Freeze at least 4 hours

1️⃣ Blend the nuts and dates until sticky and combined.

2️⃣ Press the mixture into a parchment-lined rectangular pan.

3️⃣ Blend soaked cashews with coconut milk, lemon juice, and honey until creamy.

Instrucțiuni

Pour over the base and smooth out the top.

Sprinkle lemon zest on top and freeze for at least 4 hours.

Slice into bars and store in the freezer (or fridge if consuming soon).
