Lemon Blueberry Cheesecake

1 package golden Oreo’s
1/2 stick salted butter (melted)
5 blocks(40oz) Cream Cheese
1 1/4 cups sugar
1/2 cup sour cream
1 tsp lemon extract
1 tsp vanilla extract
1 Tbsp lemon zest
1/4 cup fresh lemon juice
4 eggs (beaten)
Crush Oreos in food processor and add to mixing bowl. Melt butter in microwave and add to Oreos and mix well. Form in 9” springform pan and bake at 350° for 7-8 min then set aside.

In stand mixer add cream cheese and begin to mix on low. Add sugar and allow to mix 2-3 min. Add sour cream, lemon extract, vanilla extract, lemon zest and juice. Make sure to scrape sides so everything is well incorporated. Slowly add beaten eggs and turn off mixer when combined. Tap bowl on counter lightly for 45-60 sec to release air bubbles. Pour into spring form fan and repeat process of tapping on counter. Bake at 350° for 30 min, reduce heat to 275° for 45 min, then turn oven off and let cheesecake set in oven 30 additional min with door closed. DO NOT open oven door from initially putting in until final 30 min is up. Then crack oven door and allow to set in oven for an hour. Move to counter until cooled down then fridge uncovered overnight. Top with blueberry pie filling and enjoy the best cheesecake you have ever had!
