Creamy Mexican Chicken & Rice Tortilla Bake

Main bake:
3 large chicken breasts diced
1/2 red & 1/2 green pepper
1 tin pinto beans (drained & rinsed)
1/2 tin of sweetcorn drained
100g uncooked basmati
2 large wholewheat tortillas cut into triangles
1 tsp cumin
1 tbsp smoked paprika
1 tsp garlic powder
Salt & pepper
500ml chicken stock
Creamy sauce
200g low-fat Greek yoghurt
100ml milk
Juice of ½ lemon
1 tsp garlic powder
Top with 50–80g light grated cheese (cheddar or mozzarella). Bake at 200C for 45-50 mins.
