Potato Pancake - Kartoffelpuffer

1 pound russet potatoes, peeled

½ medium yellow onion, peeled

2 tablespoons all-purpose flour

2 egg yolks

½ teaspoon salt

½ teaspoon freshly ground black pepper

Oil, for frying

Chives, for garnish (optional)

Instrucțiuni

1. Using a box grater or food processor, grate the potatoes and put them into a medium bowl. Grate the onion into the bowl. Mix the potatoes and onion and drain any liquid. Sprinkle the flour over the potato mixture, add the egg yolks, salt, and pepper and mix.

2. Lay some paper towels on a plate next to the stovetop.

3. Heat 3 to ½ inch of oil in a large sauté pan or skillet over high heat until it shimmers.

4. Using a slotted spoon, scoop the potato mixture into the oil, fitting in as many scoops as you can without overcrowding. Using a metal spat- ula, flatten each scoop into a 4-inch disk. Fry for about 2 minutes until golden brown. Flip over the pancakes and cook for 2 minutes or so until golden brown.

5. Use the slotted spoon to remove the pancakes from the pan and place them on the paper towels to soak up any extra oil. Repeat with the remaining potato mixture.

6. Top with chives, if using, and serve with sour cream or applesauce.

Note

Seasoned with onion, these potato pancakes are crispy on the outside, soft and creamy on the inside. Serve as a side dish or as a meal.
