1 1/2lbs ground beef I used ground turkey can use meat of your choice
1 small onion, diced
3 garlic cloves, minced
3 tbsp tomato paste
4 large carrots, grated
1 1/2 cups cauliflower rice
1 tbsp garlic powder
1/2 tbsp onion powder
1 tsp chicken bouillon
1 tsp chili powder
1/2 tsp Dijon mustard
Salt and pepper, to taste
4 cups beef broth, low sodium
2 cups milk (reserve 1/2 cup for the end)
2 cups small elbow macaroni (or any short pasta)
8 oz fresh grated cheddar cheese
How to make it — (RECIPE)

In a large skillet, brown the ground beef over medium heat. Drain excess fat if necessary.
Add the diced onion, grated carrots and cauliflower. Sauté until onions are translucent, about 2-3 minutes. Add in the garlic and tomato paste, toasting for a few seconds before mixing with the beef mixture.
Stir in the garlic powder, onion powder, chicken bouillon, chili powder, salt, and pepper. Combine everything well.
Pour in the beef broth and 1.5 cups of milk. Stir in the Dijon mustard. Bring the mixture to a boil. Add the pasta, and cook for 10-12 minutes or until the pasta is tender. Stir frequently to ensure pasta does not stick.
Remove from heat and stir in the reserved 1/4 cup of milk along with the fresh grated cheddar cheese until fully melted and creamy.

I used 2lbs of meat and adjusted accordingly With extra veggies and it is very good just really adds flavor to the sauce and still getting health benefits from veggies
