Creamy Mushroom Soup

4 tbsp. Butter
1 1/2 lb. Mushrooms, Sliced
Salt And Pepper, to taste
1 whole Medium Onion, Diced
2 stalks Celery, Sliced Thin
4 cloves Garlic, Minced
2 sprigs Fresh Thyme Leaves
3 tbsp. Flour
3/4 c. Dry White Wine Or Sherry
4 c. Vegetable Or Chicken Stock
1/2 c. Heavy Cream
2 tsp. Balsamic Vinegar
Chopped Fresh Parsley, For Serving

Sauté 1/3 of mushrooms. Set aside. Add remaining mushrooms, celery, garlic, onion, and thyme. Cook for a couple minutes. Add flour to coat. Add stick and bring to boil. Then simmer for 20 minutes.
After cooling, a bit. Pour mixture in blender and blend. Return to soup pot . Add set aside mushrooms and cream. Heat and season to taste with a bit of dill and balsamic vinegar
Note
Substitute a bit of lemon zest for wine.
