Easy Balsamic Chicken & Veggie Orzo

4 boneless, skinless chicken breasts
1 cup orzo pasta
2 cups chicken broth
1 cup cherry tomatoes, halved
1 zucchini, diced
1 bell pepper, diced
1 red onion, chopped
3 tablespoons balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and black pepper, to taste
Fresh basil, chopped (for garnish)

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with oregano, salt, and black pepper.
Add the chicken to the skillet and cook for 5–7 minutes per side, until browned and fully cooked. Remove and set aside.
In the same skillet, add the garlic, cherry tomatoes, zucchini, bell pepper, and red onion. Sauté for 4–5 minutes, until veggies are just tender.
Stir in the orzo and pour in the chicken broth. Bring to a gentle boil, then reduce heat, cover, and let simmer for about 10 minutes or until the orzo is al dente and the liquid is nearly absorbed.
Return the chicken to the skillet. Drizzle balsamic vinegar over the top and let everything simmer for an additional 2–3 minutes to meld the flavors.
Garnish with fresh chopped basil and serve warm.
