Pork And Potatoes With Peppers And Onions

2lb. Pork Butt { Shoulder} cut into bite size
1Tsp Soy sauce
2 Tbs Vegetable oil
1 1/2 Tsp Black pepper
1 Tsp Kosher salt
1 Tbs Garlic, chopped
1 Tsp Ginger, minced
5 Medium Yukon Gold potatoes, peeled bite size
1 Medium Brown onion, peeled and sliced thick
1 Medium Red bell pepper, deseeded. and julienned thick
2 Scallions, chopped for finishing and garnish
1/2 Lemon juiced

Cut pork shoulder in cubes
Put on a plate and put soy sauce in it let it rest while prepping the veggies
Peel potatoes and cut into bite size pieces and soak in cool water
Peel the onion cut in half and slice it
Cut sweet bell peppers in strips
Finely chop your fresh garlic need about 1 tablespoon
Cut your fresh ginger into 1 inch piece and then cut it and stack it and mince it up
Set aside a half cut lemon
Heat your wok/skillet very hot add olive oil let that get hot then add the pork add just a touch of salt cook pork with lid for just a few
Add in onions and some more salt Add a good amount of black pepper optional add a pinch of red pepper flakes
Remove the pork and onions draining off all the oil we need it for the potatoes add potatoes quickly cover and let steam add just a touch of salt and pepper lower heat to medium cook them for about 8 minutes or so until soft
Add Garlic and ginger to the potatoes add the red bell pepper bring the heat slightly up now cover to finishing steaming the peppers and onions and Pork and potatoes remembering the pork is almost cooked
Garnish with scallions or parsley or whatever ever you have squeeze some lemon on it and serve with a side of lemon to squeeze on it
