Grandma's Lasagne

MEAT SAUCE:
1 lg onion
1 clove garlic
6 sprigs parsley
1/4 C veg. oil
1 lg can whole tomatoes (3 cups)
1 sm. can tomato paste
2 bay leaves
1 tsp salt
1/4 tsp pepper
1/2 cup water
1 lb ground beef
CHEESE SAUCE:
1 sm. onion
4 Tbs butter
3 Tbs flour
3/4 cup grated Parmesan cheese
2 cups milk
2 egg yolks
1 pkg lasagne noodles, cooked
Instrucțiuni
1ST STEP: Chop onion, garlic and parsley; fry slightly in oil. Add tomatoes, tomato paste, bay leaves, salt, pepper and water; stir. Add ground beef, breaking into small pieces. Cover and cook for 45 minutes
2ND STEP: chop onion fine and cook in butter. Mix in flour until smooth. add cheese and dash of salt. Gradually add milk and continue cooking over low heat, stirring constantly until sauce is as thick as heavy cream. Beat egg yolks. Add hot cheese mixture slowly to egg yolks (spoonful at a time up to about 1 cup), then add egg and cheese mixture to rest of cheese mixture. Cook over low heat 10 minutes.
3RD STEP:
Layer noodles, meat sauce, cheese sauce in 913 baking dish, ending with cheese sauce on top. Bake at 350 for 35-40 minutes.

Mom's Notes: This is a labor-intensive recipe that takes time and uses every stinkin' pot and pan in the kitchen.. but it is SO worth it! The best lasagne recipe ever!
