Broccoli Mac And Cheese

12 oz medium shell pasta
4 Tbsp butter (or olive oil for vegan)
1/4 cup flour
4 cups skim milk (or oat milk for vegan)
2 1/2 tsp kosher salt
1 tsp black pepper
Dash nutmeg + cayenne (optional)
1/2 tsp garlic powder
1/2 tsp paprika
1 lb broccoli florets, chopped
2 cups sharp cheddar (or plant-based cheese)
Parmesan + toasted panko, optional toppings
Instrucțiuni
Boil pasta until very al dente (save 1 cup pasta water).
In a pot, melt butter + whisk in flour for 1 min. Gradually add milk until thickened.
Stir in seasonings, broccoli + pasta. Cook 2–3 mins more.
Add cheddar, turn off heat, stir + enjoy!
Top with Parmesan or panko if you’re feeling fancy.
