One Dish Nandos Rice

Ingredients

ONE DISH NANDOS RICE BAKE

INGREDIENTS (Serves 4):

600g chicken, largely diced

2 small red onion, diced

1 red or yellow pepper, diced

4 garlic cloves / lazy garlic

1 packet nandos seasoning mix

240g long grain rice (would usually take 15 mins to boil)

1 tsp paprika, salt, black pepper

800ml diluted chicken stock

60g Nando's chilli jam

1 packet/200g halloumi, diced

METHOD:

1. Dice the halloumi, and sit it on some kitchen roll to dry out a little. Chop the rest of the ingredients whilst the oven pre-heats to 200'C.

2. Add everything to a large, deep, baking dish (except the halloumi and chilli jam). Mix everything together then add some tin foil on top.

3. Bake in the oven for 35 minutes, remove and give it a mix. Add the diced halloumi on top, then put the dish back in the oven for another 15-20 minutes (without tin foil), until the rice is cooked through.

4. Split between 4 and top with some chilli jam
