Beetroot Pkhali - One of Georgia’s Most Loved Classics

Ingredients

1 medium beetroot

60 g walnuts

1–2 garlic cloves

1 tsp red wine vinegar

1 tbsp sunflower oil

Salt to taste

1/4 tsp fenugreek

1/4 tsp ground coriander

Red chilli to taste

2–3 walnuts for decoration (optional)

Directions

Boil the beetroot until tender. Remove it from the water, let it cool, then grate it.

Blend the walnuts until finely ground and grate the garlic.

Add the walnuts to the grated beetroot. Add garlic, vinegar, oil, salt, fenugreek, coriander and red chilli.

Mix everything well, preferably by hand.

Shape the pkhali and decorate with walnuts if desired.
