Broccoli Caesar Salad

Ingredients

caesar dressing:

4-6 garlic cloves

5 anchovy fillets - rinsed

1/3 cup dijon vinegar

1/3 cup sherry vinegar (or apple cider vinegar)

1/3 cup lemon juice (about 1 lemon)

2 ea eggs

2 pinches kosher salt

2 pinches black pepper

2 cups of your favorite salad oil

Toppings: sliced apple, chopped almonds, toasted bread crumbs, toasted quinoa

Directions

Roast broccoli (salt and olive oil) 10-15m @ 500

Dressing

In food processor- chop up the garlic - then add other ingredients and run processor 15s to incorporate eggs. Slowly add olive oil

Combine broccoli with dressing

Add Parmesan cheese

Other toppings - cut up apples, chopped almonds, toasted bread crumbs or toasted quinoa
