Let’s start with the side that’s probably going to steal the whole meal. Your usual mash, but threaded with deeply caramelised onions so they run through in golden swirls, with little pockets of molten Gruyère tucked in. It looks simple at first glance, but it’s outrageously good.
I portion it into the dish with a big ice-cream scoop — it gives you perfect portions, avoids that chaos of everyone hacking into the serving bowl. A final snowfall of Gruyère on top, then under the grill until bubbling and lightly blistered.
