Cajun Chicken Pasta Bake

5 chicken breasts
500g (dry weight) rigatoni
1 tbsp Cajun seasoning
1 tsp smoked paprika
1 tsp garlic granules
1 red onion
1 red pepper
1 bag spinach
2 tbsp tomato puree
165g lightest Philadelphia
200ml chicken stock
Grated mozzarella
Grated cheddar
Salt and pepper to taste
Firstly, preheat your oven to 180 degrees C. fry off your chicken in some oil, add your seasonings and fry off until golden. Then add your chopped onion and pepper and cook until softened. Then add your tomato paste, followed by the Philadelphia and chicken stock and simmer until it forms a sauce, then add your spinach.
Meantime boil your pasta until al dente. Once boiled, drain and add to a large dish with the sauce. Mix thoroughly, add your cheese and bake in the oven for around 20 mins or until golden on top.
Divide into 6 containers (if you’re doing it for meal prep like me) or serve and enjoy!
