Greek Chickpea Salad

Ingredients

Crisp, colorful, and packed with flavor—perfect for a light meal or side dish!

Salad:

1 15 oz can chickpeas (garbanzo beans), drained and rinsed

1 ½ cups diced cucumber

1 ½ cups diced bell pepper

1 cup halved cherry tomatoes

½ cup pitted olives, roughly chopped (kalamata, castelvetrano, etc)

Optional: 1/3 cup chopped pepperoncini peppers

½ cup crumbled feta cheese (regular or vegan)

Vinaigrette:

1/4 cup olive oil

3 tbsp red wine vinegar

Juice from ½ of a lemon (~1 tbsp)

1 tsp dijon mustard

½ tsp garlic powder

½ tsp dried oregano

¼ tsp salt

¼ tsp black pepper

Whisk together all ingredients for the vinaigrette until smooth. Add all of the ingredients to a large bowl and toss well to combine. Enjoy!
